Scientists have traced gray hair to the absence of catalase enzymes. Hydrogen peroxide, which is naturally found in the body, is responsible for interfering with the pigment that colors skin and hair. The catalase enzyme is responsible for breaking down this hydrogen peroxide into water and oxygen.

As we grow older, our body produces less of the catalase enzyme, leaving nothing to transform the hydrogen peroxide into chemicals the body can release. As the hydrogen peroxide builds up, we grow gray.
